I loooove peanut butter. Yes, I have been known to eat it by spoon directly out of the jar. (Occasionally).  

 

I had been craving something like these peanut butter balls; I had a memory of something very peanutty and very sweet at the same time… something that would have been made by my American house mother when I was at boarding school. I don’t believe these are it (they’re called ‘biscuits’, after all), but they are definitely worth sharing!  

 

These require very few ingredients, that are beaten, mixed, rolled, baked and then dusted in icing sugar. If you like peanut butter, and don’t mind a triple dose of butter, peanut butter and sugar, then by all means, dig in!  
Peanut Puff Biscuits 

 

Biscuits can be made 4 days ahead. 

 

175g butter
½ cup smooth peanut butter
½ cup icing sugar
2 cups plain flour

¾ cup chopped salted peanuts

Icing sugar, extra 

 

Beat butter, peanut butter and sifted icing sugar in a bowl with electric mixer until light and fluffy, stir in sifted flour and peanuts. Roll heaped teaspoons of mixture into balls, place on lightly greased oven trays. Bake in moderately hot oven for about 12 minutes, or until lightly browned. Stand biscuits on trays for 2 minutes, then roll in sifted extra icing sugar; cool on wire racks.  

 

Makes about 60.

 

Not suitable to freeze.
Not suitable to microwave.
