This recipe has got to be the easiest, most convenient meal I know! With all of the ingredients already stocked in your pantry, and a little bacon in the freezer, just chop up an onion and you’re ready to roll!

 

 

Saucy Bacon and Beans

Serves 4

Ingredients
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, crushed
2 rashers bacon, chopped
425g can diced tomatoes
465g can red kidney beans, rinsed and drained
310g can butter beans, rinsed and drained
2 tablespoons golden syrup
2 tablespoons soy sauce*

Method
Heat oil in a large saucepan. Add onion, garlic and bacon and fry for 1 minute.

Stir in all other ingredients and bring to the boil. Boil, uncovered, for 5 to 6 minutes or until sauce has thickened slightly.

Serve with cooked brown (or white) rice.

Notes

*Use tamari for a gluten-free option.
