This one’s the ugly but beautiful slice. It’s another hot, hot autumn day (summer’s not really over yet), and the shops are shut for Labor Day. Hence, a no-bake slice – perfect for a day spent inside hiding from the end of summer’s heat, and using ingredients that I suspect might be already in your pantry.
Full of wholesome and homely flavours, this one may not look pretty, but with a combination of oats, rice bubbles, peanut butter and honey, plus sweet add-ins of sultanas and choc-chips, what really is there not to like?
Originally made into balls, I’ve skipped the rolling step and pressed it into a lamington slice tin instead. Quick and easy! And perfect for work or school lunches.
Peanut Butter Oat Slice
Barely adapted from My Recipes
2 tablespoons unsalted butter
2/3 cup smooth peanut butter
1/4 cup icing sugar
3 tablespoons honey
1 teaspoon vanilla extract
1 1/2 cups Rice Bubbles cereal
1 cup quick oats (I used the non quick kind)
1/4 cup raisins (I used sultanas)
1/4 cup dark chocolate chips
100g dark cooking chocolate, extra, melted
1/4 cup finely chopped lightly salted dry-roasted peanuts
Grease and line a shallow slice tin (base measures 17cm x 27cm). Melt butter in a medium saucepan over medium heat. Remove pan from heat and stir in peanut butter, icing sugar, honey and vanilla. Stir in Rice Bubbles and oats and allow mixture to cool.
Stir in sultanas and chocolate chips. Press mixture into a baking paper lined baking pan and throw it in the fridge. When cool, drizzle with melted chocolate, and sprinkle with chopped peanuts (I did it the other way round!).
Cut them into little squares and bars. Take them to work, or keep a stash for after-school snacks!
